Turkey Meatloaf

Tips: Turkey meatloaf has so many variations for meals. Slice and make your ultimate sandwich adding red onion, chipolte mayo. A winter meal served with feel good mashed potatoes or roasted potatoes. Yummy family favorite!

INGREDIENTS:
1 medium onion, finely chopped
1 garlic clove, crushed
2 lb lean, ground turkey
1 tbsp chopped fresh parsley
1 tbsp chopped fresh chives
1 tbsp chopped fresh tarragon
1 medium egg, lightly beaten
1 sliced medium & large zucchini ( for side dish)
DIRECTIONS:
  1. Preheat the oven to 375`F and line a nonstick loaf pan with baking parchment. Place the onion, garlic, and turkey in a bowl, add herbs, tomato sauce, salt & pepper. Add egg and mix together.

  2. Press half of the turkey mixture into the base of the pan. Layer sliced medium zucchini and tomatoes over the meat. Add remaining turkey and press down firmly. Add tomato sauce salt & pepper.

  3. Cover with foil and place in a roasting pan. Bake in the oven for 1-1 1/2 hours, removing the foil for the last 15 minutes of cooking.

  4. Plate turkey loaf over creamy mashed potatoes and side of steamed zucchini seasoned with drizzle of butter, salt & pepper.
