Raspberry Sauce

Tips: This sauce is delicious poured over low-fat ice cream. For and extra-colorful sauce, replace the raspberries with and assortment of summer berries.

INGREDIENTS:
8 oz raspberries, thawed if frozen
2 tbsp fruit cordial
3 1/2 oz marshmallows
DIRECTIONS:
  1. Place the raspberries and fruit cordial in a small pan, bring to a boil, and simmer for 2-3 minutes, until the fruit is just beginning to soften.

  2. Stir the marshmallows into the raspberry mixture and heat through, stirring, until the marshmallows begin to melt.

  3. Serve at once.
