Fruit Brulee

INGREDIENTS:
4 plums, pitted and sliced
2 cooking apples, peeled and sliced
1 tsp ground ginger
2 1/2 cups strained plain yogurt
2 tbsp confectioner's sugar, sifted
1 tsp almond essence
scant 1/2 cup raw brown sugar
DIRECTIONS:
  1. Put the plums and apples into a pan with 2 tbsp of water and cook for 7-10 minutes, or until tender but not mushy. Let cool for 10 minutes, then stir in the ground ginger.

  2. Using a perforated spoon, spoon the mixture into the bottom of a shallow, ovenproof serving dish.

  3. Combine the yogurt, confectioner's sugar, and almond essence and spoon over the fruit to cover.

  4. Sprinkle the brown sugar over the top of the yogurt and cook under a preheated hot broiler for 3-4 minutes, or until the sugar has melted and formed a crust.

  5. Let chill in the refrigerator for 1 hour before serving.
