Baked Tuna Croquettes

INGREDIENTS:
12 oz can tuna, packed in water, drained
1 cup leftover rice (brown or white)
1 egg, beaten
2 tbsp plus 6 tsp light (reduced-calorie) mayonnaise
1/4 tsp black pepper
1 tsp dried onion flakes
nonstick cooking spray
6 tsp dill pickle relish
DIRECTIONS:
  1. Preheat oven to 400`F. In a small mixing bowl, combine tuna with rice, egg, 2 tbsp mayonnaise, black pepper, and onion flakes.

  2. Spray 6 cups of a muffin tin with nonstick cooking spray. Spoon about half a cup of the mixture into each muffin mold, then press firmly on each to help the croquette keep its shape.

  3. Bake for approximately 22-25 minutes. Quickly remove croquettes from muffin tin with a spatula.

  4. Top each with 1 tsp light mayonnaise then 1 tsp dill pickle relish for a garnish.
