Candied Sweet Potatoes |

large sweet potatoes, peeled and cut into 1/2in thick pounds |

vegetable oil |

1/2 cup |
firmly packed brown sugar |

1/4 cup |
butter |
|
1/4 cup |
light corn syrup |
|
1/4 cup |
water |

DIRECTIONS:
- Preheat oven to 450`F. Spray a rimmed baking sheet with nonstick cooking spray.
- In a large bowl, combine sweet potatoes and oil; tossing gently to coat. Arrange potatoes in a single layer on prepared baking sheet. Bake for 30 minutes.
- In a medium saucepan, combine brown sugar, butter, corn syrup, and 1/4 cup water. Bring to a boil over medium-high heat; reduce heat, and simmer for 8 minutes.
- Pour hot syrup over potatoes before serving.
