Cajun Chicken and Rice

INGREDIENTS:
1 small onion, sliced
2 garlic cloves, sliced
1 bay leaf
olive oil
14.5 oz can diced tomatoes
2 cups frozen cut okra
1 cup frozen corn
1/4 tsp cayenne pepper
salt and pepper, to taste
1 1/2 cups shredded rotisserie chicken
rice, cooked
DIRECTIONS:
  1. Cook onion, garlic, and bay leaf in olive oil in a skillet over medium heat until softened, 8-10 minutes.

  2. Add can of diced tomatoes, frozen cut okra, frozen corn, and cayenne; season with salt and pepper. Cook until tender, 6-7 minutes.

  3. Stir in rotisserie chicken and serve over cooked rice.
