Chicken with Lemons and Olives

INGREDIENTS:
2 1/2 - 3 lbs bone-in, skin-on chicken pieces
1/2 tsp kosher salt
1/4 tsp black pepper
2 tsp olive oil
1 lemon, thinly sliced
1/2 cup pitted kalamata olives
DIRECTIONS:
  1. Heat oven to 400` F. Season chicken with kosher salt and black pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Working in batched if necessary, cook the chicken until golden brown, 5-6 minutes per side.

  3. Transfer to a rimmed baking sheet and bake until cooked through, 15-20 minutes.

  4. To the skillet, add lemon and cook until golden, 1-2 minutes per side. Mix in olives and serve over the chicken.
