Greek Spinach Veggie Burgers

INGREDIENTS:
1/4 cup olive oil
1 clove garlic, minced
1 tsp dried oregano
1 tsp dried dillweed
1/4 tsp black pepper
1 cup herb-seasoned stuffing mix
2 eggs, lightly beaten
1 (10 oz) package frozen chopped spinach, thawed and well drained
DIRECTIONS:
  1. In a medium bowl combine oil, garlic, oregano, dillweed and pepper. Stir in stuffing mix to coat thoroughly. Stir in egg, spinach and feta cheese; mix well. Shape into 4 1/2-inch thick patties.

  2. Heat a griddle or large nonstick skillet over medium heat. Add patties. Cook for 3 to 4 minutes per side or until browned and heated through.

  3. Serve on buns with assorted toppings.
