Tofu Cutlets

Tips: These delicious, high-protein patties make a satisfying vegetarian weeknight meal served with lightly steamed vegetables or a grilled bun with your favorite toppings.

INGREDIENTS:
1 onion, finely chopped
1 garlic clove, crushed
1 3/4 cups unsalted peanuts
OPTIONAL small bunch of fresh coriander
9 oz firm tofu, drained and crumbled
1/2 cup brown rice
1 tbsp vegetable oil
2 tbsp soy sauce
DIRECTIONS:
  1. Cook rice according to instructions on the package, then drain. Heat vegetable oil in frying pan and cook onion and garlic over low heat, stirring occasionally, for about 5 minutes, until golden brown.

  2. Spread peanuts ona baking sheet and broil , until browned.

  3. In blender or food processor add peanuts, onion, garlic, rice, tofu, coriander, add soy sauce and process until the mixture has consistancy of thick paste.

  4. Divide the paste into eight equal-size cutlet patties.

  5. Heat the olive oil for shallow frying in a large frying pan. Add the cutlets and cook for 5-10 minutes on each side, until golden brown.

  6. Remove from the pan and place on paper towels to drain. Keep warm while you cook the remaining batch, then serve on a grilled bun or sauteed vegetables.
